Theoretically you can hook up your iPad with one of Apple's Bluetooth Keyboards. This will allow you to use the keyboard for typing rather than the on screen keyboard.
I'm not sure if this same method works for iPods & iPhones because their Bluetooth options might be a little different.

Of course an external keyboard works fine on iPad, but my query is concerning the data entry using quantity and description for orders, quotes and invoicing utilizing the tab and return keys instead of scrolling.

You can use the Tab Key from the External Keyboard to cycle through the different fields.
